Our winemaker sets up blind tastings for us. The 'control point' is on the left - that is the wine as is from the barrel. Every other wine is different percentages of Cab Franc added to the control point. It's our challenge to determine the percentages in each glass, determine how we want the wine to progress to in the next six months, and then hope that we both agree on the desired outcome!
We just finished bottling our 2013 Cabernet and Cab Franc. The bottling truck crew is so efficient - it's over in 15 minutes!
